INGREDIENTS:
- 8 lamb chops
- Blueberry Spice
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh mint leaves for garnish
Serve with a simple cucumber salad on the side!
INSTRUCTIONS:
- Preheat oven to 400°F.
- Season lamb chops with salt and pepper.
- Rub olive oil on both sides of each chop.
- Coat chops with a generous amount of blueberry spice.
- Place chops on a baking sheet and bake for 25-30 minutes.
- Garnish with mint leaves and a shake of blueberry spice for good measure.
